Tapas
If you go to Spain, you must eat Tapas. Lots of Tapas. Try to have them for every meal. And snack. They are little foods that keep appearing. You find them in dark, galley-like bars, restaurants that you sit on logs or cafes that look like bus stops. They are on main street, back alleys and everywhere in between. Some places have them cold in deli fridges, hot off the grill ordered from menus. Ask for the ones you cant identify in the buffet, order the ones you cant pronounce from the list. It is even better when you realise you have ordered Tapas all by yourself without your Spanish speaking friends to help.
Do not try to have Tapas in a hurry. You can. But, they are best enjoyed in a leisurely manner. Mind you; quick Tapas are better than no Tapas. And they go well with wine. And beer. There are lots of other cool things to see and do in Spain. Just make Tapas the top priority. Every cool thing to see and do in Spain has fantastic Tapas right beside it.

Hint – if there is a set of Tapas that are a pot of melted cheese with anchovies in the middle, and potato wedges as a side, do it. Or Tapenade or Pesto in place of anchovies.
